Anything like kale that doesn't taste like kale?

Chard is good but its different in carbs and vitamins and minerals and such. What are your favorite green leaf veggies that have the good sides of kale without the taste, or, what are your favorite kale recipes?

  • I like to do kale "chips" - just rip the leafy part off the stem in big pieces, toss with a bit of olive oil (about a teaspoon for an average bunch of kale) then spread out on a cookie sheet and bake for 15 minutes at 250-275. sprinkle with salt/pepper, and they're actually quite a good substitute for potato chips. (seriously, they are!)

  • Try tossing your Kale in a smoothie after a hard workout. I usually do:

    whey protein
    organic banana
    organic kale
    almond milk
    local honey
    Justins almond butter or Udo's oil or Coconut Oil

  • Since living in the south I have learned to love mustard, turnip and collard greens. They're delicious steamed with sliced onion and served with cider vinegar and a little Tabasco. (I don't see any harm in adding a ham hock to the cooking water if you want to go that route.) I don't know exactly how the nutrients stack up, but I would bet they're comparable. Thanks for the inspiration - I have been stuck in a salad-greens rut!

  • Mustard greens! I think like collards, most people cook them, but I think they're totally fine in a salad too.

  • Kale chips! I cook mine a little hotter and a little longer (22 minutes at 300), and they are crunchy and delicious. Even my picky toddler eats them.

  • swiss chard? Bok Choy? But really- I'm a spinach guy.
    not sure if brussels sprouts count, but I love them too.
    Kale is OK. not my favorite- but it goes well inside things.

  • Kale chips are the bomb. Also recently did a kale salad with a lemon vinaigrette. That was good too.
