its not a 70.3, but we're doing the Disney World marathon for our 20th... in 2010.... i think there is a Disney Tri, too, but not sure if it is officially sanctioned or not...

Sure love the idea of doing something challenging for an anniversary. In the same line of thinking, there's a site called birthdaychallenge.com where ... well, here's what they say:
Inspired by Jack LaLanne, a birthday challenge is essentially a goal, generally in the form of physical achievement, to make your birthday more memorable than the last. Usually the number of your years lends itself to the base of your challenge. For example, on his 70th birthday Jack LaLanne towed 70 boats carrying 70 of his friends across Long Beach Harbor (about 3 miles), handcuffed and shackled.
I'm turning 48 in January and am already brainstorming ideas for my own birthday challenge.

70.3 and a wedding anniversary...that sounds AWESOME! I personally have never done a 70.3 (I stick with the 140.6 distance)...but I have heard that Timberman is AWESOME! If you truly want an amazing experience you may want to look into California Ironman (but it's in March) it's produced by North American Sports and is USAT sanctioned, as well as the Florida 70.3 in May. Florida 70.3 takes place AT Disney World!
The Big Kahuna Triathlon is in Santa Cruz California in September. I have worked that race many times and it's a BLAST! It is also a Sanctioned event.

There's a 70.3 in Cancun if you like the Caribbean. It's in September.

I am doing Vineman 70.3 in 2009 and I have heard from folks that it is one of the most amazing races around. I am SO excited!

It is...it is a point to point race. The bike course is pretty and it has some rollers and then you go up the infamous Chalk Hill (very steep) and the run is an out and back and it is tough.
We lucked out with the weather last year. If it is hot there is no shade.Good luck! You will have a blast!
