What don't you mix the whole schedule up and put your hard runs on your off days and easier runs on working days. From what I'm reading, you're only working 2 days a week so it doesn't appear like there's any other reasons why your schedule can't be rearranged.
Since you have 2 rest days, I would suggest NOT to run 4 days in a row.
How about this:
Sun intervals
Mon rest
Tues 30-45 min fartlek
Wed 100m hills
Thurs rest
Fri 20-30 min tempo
Sat 90 minute easyEither one of those rest days could be used for cross training or an easy run.
