I have a lot of rest days myself, but I'm also a relatively slow triathlete. I guess it depends on your goals. It is easy to get burnt out, I think, especially if you are just starting out.
For me, I mostly run, and find swimming very difficult and taxing, so sometimes if I want a rest day but really feel I need to get a workout in, I'll do an easy bike ride. I think that is a good compromise as well. Good luck!
