When you first start running and take time off that's close to a week, you'll probably be at the same level as when you started. However if you're injuried you want to take the rest time to avoid further injury. Once completely healthy try runnng every other day for starting out. Mix a walk in with your run. Soon enough you'll see the endurance pick up.

I read a study a few months ago on this issue. It showed, like Gary pointed out, that you don't loose anything significant for a week. After that, it goes pretty quick with being forced to go back to starting levels at 4 or 5 weeks. But even then if you don't wait too long you can regain that progress faster coming back.
